The Delicious Kristie’s Peanut Butter Balls


1 cup to 1 1/2 cup Swerve Confectioners Sugar (use 1 cup if you don’t want it too sweet)
3/4 cup of Natural Creamy Peanut Butter (I used Laura Scudder’s Organic because it was no sugar added and only 3 net carbs per 2 Tbsps. I found it at Walmart)
3 Tbsps of Kerrygold Butter, softened
1 tsp Vanilla Extract
1 cup of Lily’s Dark Chocolate Chips no sugar added.



Line a baking sheet with parchment paper and set aside. You’ll definitely want to wear disposable gloves. Mix first 4 ingredients by hand. Then I used a small cookie scoop to scoop the dough out and rolled into balls and place on the parchment paper. I made 16 uniformed peanut butter balls. Melt the chocolate chips in a microwave safe bowl. Roll each peanut butter ball with a fork in the melted chocolate chips and sit back on the parchment paper for the chocolate to set, may have to refrigerate. Store in an airtight container. You’ll have to figure out the carbs, but all ingredients are Keto friendly. Enjoy
